Ingredients

  • 2 large sweet potatoes, peeled and diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lime
  • Zest of 1 lime
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the diced sweet potatoes, olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through for even cooking.
  4. Once the sweet potatoes are done, remove them from the oven and drizzle with lime juice and lime zest. Toss gently to combine.
  5. Transfer the roasted sweet potatoes to a serving dish and sprinkle with crumbled feta cheese and chopped cilantro, if using. Serve warm.
