- 2 large sweet potatoes, peeled and diced into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lime
- Zest of 1 lime
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh cilantro, chopped (optional)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the diced sweet potatoes, olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through for even cooking.
- Once the sweet potatoes are done, remove them from the oven and drizzle with lime juice and lime zest. Toss gently to combine.
- Transfer the roasted sweet potatoes to a serving dish and sprinkle with crumbled feta cheese and chopped cilantro, if using. Serve warm.

- For added heat, sprinkle some red pepper flakes over the sweet potatoes before roasting.
