- 8 ounces of rice noodles
- 2 tablespoons of vegetable oil
- 4 cloves of garlic, minced
- 1 teaspoon of red pepper flakes
- 1/4 cup of soy sauce
- 2 tablespoons of chili paste
- 1 tablespoon of brown sugar
- 1/2 cup of green onions, chopped
- 1/2 cup of shredded carrots
- 1/2 cup of bell peppers, thinly sliced
- 1/4 cup of fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
- Stir in the soy sauce, chili paste, and brown sugar. Mix well and let it simmer for 2-3 minutes.
- Add the cooked noodles to the skillet and toss to coat them evenly with the sauce.
- Fold in the green onions, shredded carrots, and bell peppers, cooking for an additional 2-3 minutes until the vegetables are slightly tender.
- Remove from heat and stir in the fresh cilantro.
- Divide the noodle mixture into cups or bowls and serve with lime wedges on the side for squeezing over the top.
Notes
- For added protein, consider adding cooked shrimp, chicken, or tofu to the noodle mixture.
- To customize the spice level, adjust the amount of red pepper flakes and chili paste according to your taste preference.
