Description

Chili Garlic Noodle Cups are a spicy and flavorful dish that combines rice noodles with a zesty garlic and chili sauce, topped with fresh vegetables.


Ingredients

  • 8 ounces of rice noodles
  • 2 tablespoons of vegetable oil
  • 4 cloves of garlic, minced
  • 1 teaspoon of red pepper flakes
  • 1/4 cup of soy sauce
  • 2 tablespoons of chili paste
  • 1 tablespoon of brown sugar
  • 1/2 cup of green onions, chopped
  • 1/2 cup of shredded carrots
  • 1/2 cup of bell peppers, thinly sliced
  • 1/4 cup of fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Stir in the soy sauce, chili paste, and brown sugar. Mix well and let it simmer for 2-3 minutes.
  4. Add the cooked noodles to the skillet and toss to coat them evenly with the sauce.
  5. Fold in the green onions, shredded carrots, and bell peppers, cooking for an additional 2-3 minutes until the vegetables are slightly tender.
  6. Remove from heat and stir in the fresh cilantro.
  7. Divide the noodle mixture into cups or bowls and serve with lime wedges on the side for squeezing over the top.
