- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 large egg
- 2 tablespoons olive oil
- 1 tablespoon olive oil (for curry sauce)
- 1 small onion, finely chopped
- 1 clove garlic, minced (for curry sauce)
- 1 tablespoon curry powder
- 1 can (14 ounces) coconut milk
- 1 cup vegetable broth
- 1 tablespoon soy sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
- Add breadcrumbs, Parmesan cheese, parsley, minced garlic, cumin, coriander, salt, black pepper, red pepper flakes, and egg. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet. Drizzle the meatballs with olive oil.
- Bake for 20-25 minutes, turning halfway through, until golden brown.
- While the meatballs are baking, prepare the curry sauce. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and curry powder; cook for an additional minute.
- Pour in the coconut milk and vegetable broth, then add soy sauce. Bring to a simmer and let it cook for 5-10 minutes, allowing the flavors to meld.
- Season with salt and pepper to taste.
- Once the meatballs are done, gently add them to the curry sauce and simmer for an additional 5 minutes.
- Serve the chickpea meatballs in the curry sauce over rice or with naan bread.
Notes
- For added flavor, try adding a squeeze of lime juice to the curry sauce before serving.
- You can also substitute the chickpeas with black beans for a different taste.
