Ingredients

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 large egg
  • 2 tablespoons olive oil
  • 1 tablespoon olive oil (for curry sauce)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced (for curry sauce)
  • 1 tablespoon curry powder
  • 1 can (14 ounces) coconut milk
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
  3. Add breadcrumbs, Parmesan cheese, parsley, minced garlic, cumin, coriander, salt, black pepper, red pepper flakes, and egg. Mix until well combined.
  4. Form the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet. Drizzle the meatballs with olive oil.
  5. Bake for 20-25 minutes, turning halfway through, until golden brown.
  6. While the meatballs are baking, prepare the curry sauce. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  7. Add the chopped onion and sauté until translucent, about 5 minutes.
  8. Stir in the minced garlic and curry powder; cook for an additional minute.
  9. Pour in the coconut milk and vegetable broth, then add soy sauce. Bring to a simmer and let it cook for 5-10 minutes, allowing the flavors to meld.
  10. Season with salt and pepper to taste.
  11. Once the meatballs are done, gently add them to the curry sauce and simmer for an additional 5 minutes.
  12. Serve the chickpea meatballs in the curry sauce over rice or with naan bread.

Notes

  • For added flavor, try adding a squeeze of lime juice to the curry sauce before serving.
  • You can also substitute the chickpeas with black beans for a different taste.
