  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 wooden or metal skewers
  • 1 cup plain Greek yogurt
  • 1/4 cup fresh mint leaves, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. In a large bowl, combine the chicken cubes, olive oil, garlic powder, onion powder, paprika, cumin, salt, and pepper. Toss until the chicken is evenly coated.
  3. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  4. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  5. While the chicken is grilling, prepare the yogurt and mint sauce by mixing together the Greek yogurt, chopped mint, lemon juice, honey, salt, and pepper in a small bowl until well combined.
  6. Once the chicken skewers are done, remove them from the grill and let them rest for a few minutes. Serve with the yogurt and mint sauce on the side.

  • For added flavor, marinate the chicken in the spice mixture for at least 30 minutes or up to overnight in the refrigerator.
