Description

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup chicken broth
  • 1/2 cup dry white wine (or additional chicken broth)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces linguine or spaghetti
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • Lemon wedges, for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  3. Pour in the chicken broth and white wine, scraping the bottom of the skillet to deglaze. Bring to a simmer and let it cook for about 5 minutes to reduce slightly.
  4. Stir in the lemon juice, salt, and black pepper. Return the cooked chicken to the skillet and simmer for another 2-3 minutes.
  5. Meanwhile, cook the linguine or spaghetti according to package instructions until al dente. Drain and add to the skillet with the chicken and sauce. Toss to combine.
  6. Remove from heat and stir in the chopped parsley and grated Parmesan cheese. Serve immediately with lemon wedges on the side.

Notes

  • For a lighter version, use zucchini noodles instead of pasta.
