Description

A creamy and comforting Chicken & Mushroom Alfredo made with tender chicken, sautéed mushrooms, and a rich Alfredo sauce. Perfect for any cozy dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1 1/2 cups grated Parmesan cheese
  • 12 oz fettuccine pasta (or pasta of choice)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Optional Add-Ins:

  • A pinch of nutmeg (for extra flavor)
  • A splash of white wine (for deglazing the pan)
  • Lemon juice (for serving)

Instructions

  • Cook the chicken in olive oil until browned and fully cooked. Set aside.
  • Sauté mushrooms in butter and olive oil until golden. Add garlic and cook for another minute.
  • Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until the sauce is creamy.
  • Return the chicken to the pan with the sauce. Simmer for a few minutes, then serve over pasta.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • You can substitute chicken with shrimp or omit for a vegetarian version.
