Description

These easy, healthy chicken meatballs are tender, flavorful, and perfect for any meal. Serve them with pasta, rice, or as an appetizer with your favorite dipping sauce!


Ingredients

  • 1 lb ground chicken
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 garlic cloves, minced
  • 1/4 cup grated onion
  • 2 tbsp fresh parsley, chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Mix all ingredients in a large bowl until just combined.
  • Form into 1 1/2-inch meatballs and place on the baking sheet.
  • Bake for 18-20 minutes until golden brown and cooked through.
  • Serve with your favorite sauce or as an appetizer.

Notes

  • Don’t overmix the meat to keep the meatballs tender.
  • These meatballs can be made ahead and frozen for meal prep.
