Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups low-sodium chicken broth
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can white beans, drained and rinsed
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup fresh parsley, chopped (for garnish)
  • Crusty bread (for serving)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the garlic, carrots, and celery. Cook for another 5 minutes until the vegetables begin to soften.
  3. Add the chicken pieces to the pot and cook until lightly browned, about 5-7 minutes.
  4. Sprinkle in the thyme, rosemary, smoked paprika, and red pepper flakes (if using). Stir to combine.
  5. Pour in the chicken broth and add the diced tomatoes, white beans, and bay leaf. Bring the mixture to a boil.
  6. Reduce the heat to low, cover, and let it simmer for 25-30 minutes, stirring occasionally.
  7. Season with salt and pepper to taste. Remove the bay leaf before serving.
  8. Ladle the soup into bowls, garnish with fresh parsley, and serve with crusty bread on the side.

Notes

  • For a heartier soup, add diced potatoes or sweet potatoes during step 2.
  • To make it a bit spicier, add a diced jalapeño or a dash of hot sauce before serving.
