A hearty and comforting Chicken Cassoulet Soup perfect for any meal.
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- 4 cups low-sodium chicken broth
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (15-ounce) can white beans, drained and rinsed
- 1 bay leaf
- Salt and pepper to taste
- 1 cup fresh parsley, chopped (for garnish)
- Crusty bread (for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the garlic, carrots, and celery. Cook for another 5 minutes until the vegetables begin to soften.
- Add the chicken pieces to the pot and cook until lightly browned, about 5-7 minutes.
- Sprinkle in the thyme, rosemary, smoked paprika, and red pepper flakes (if using). Stir to combine.
- Pour in the chicken broth and add the diced tomatoes, white beans, and bay leaf. Bring the mixture to a boil.
- Reduce the heat to low, cover, and let it simmer for 25-30 minutes, stirring occasionally.
- Season with salt and pepper to taste. Remove the bay leaf before serving.
- Ladle the soup into bowls, garnish with fresh parsley, and serve with crusty bread on the side.
Notes
- For a heartier soup, add diced potatoes or sweet potatoes during step 2.
- To make it a bit spicier, add a diced jalapeño or a dash of hot sauce before serving.
