Description

A hearty and nutritious dish combining chicken, bulgur wheat, and sauerkraut for a delightful meal.


Ingredients

  • 2 cups bulgur wheat
  • 4 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups sauerkraut, drained
  • 1 tablespoon apple cider vinegar
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the bulgur wheat under cold water until the water runs clear, then set it aside to drain.
  2. In a saucepan, bring the chicken broth to a vigorous boil.
  3. Stir in the bulgur, cover the pot, and lower the heat to a gentle simmer. Cook for approximately 12-15 minutes until the bulgur is soft and has absorbed all the liquid.
  4. Remove from heat and let it rest, covered, for an additional 5 minutes before fluffing it with a fork.
  5. In a large skillet, warm the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent and tender.
  6. Incorporate the minced garlic and sauté for another minute until fragrant.
  7. Season the chicken breasts with smoked paprika, thyme, salt, and black pepper. Place the seasoned chicken in the skillet and cook for about 6-7 minutes on each side, or until thoroughly cooked and no longer pink inside.
  8. Transfer the chicken to a cutting board and allow it to rest for a few minutes before slicing it into strips.
  9. In the same skillet, add the drained sauerkraut along with the apple cider vinegar. Stir and cook for about 3-4 minutes until warmed through and slightly caramelized.
  10. To assemble, scoop a generous portion of bulgur onto each plate, layer the sliced chicken on top, and spoon the sauerkraut mixture over everything. Finish with fresh chopped parsley for garnish.
