- 2 cups bulgur wheat
- 4 cups chicken broth
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups sauerkraut, drained
- 1 tablespoon apple cider vinegar
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse the bulgur wheat under cold water until the water runs clear, then set it aside to drain.
- In a saucepan, bring the chicken broth to a vigorous boil.
- Stir in the bulgur, cover the pot, and lower the heat to a gentle simmer. Cook for approximately 12-15 minutes until the bulgur is soft and has absorbed all the liquid.
- Remove from heat and let it rest, covered, for an additional 5 minutes before fluffing it with a fork.
- In a large skillet, warm the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent and tender.
- Incorporate the minced garlic and sauté for another minute until fragrant.
- Season the chicken breasts with smoked paprika, thyme, salt, and black pepper. Place the seasoned chicken in the skillet and cook for about 6-7 minutes on each side, or until thoroughly cooked and no longer pink inside.
- Transfer the chicken to a cutting board and allow it to rest for a few minutes before slicing it into strips.
- In the same skillet, add the drained sauerkraut along with the apple cider vinegar. Stir and cook for about 3-4 minutes until warmed through and slightly caramelized.
- To assemble, scoop a generous portion of bulgur onto each plate, layer the sliced chicken on top, and spoon the sauerkraut mixture over everything. Finish with fresh chopped parsley for garnish.
