- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup erythritol or your preferred keto sweetener
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the almond flour, cocoa powder, baking powder, salt, and erythritol until well combined.
- In a separate large bowl, mix the melted butter, eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the sugar-free chocolate chips.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a nut-free version, substitute almond flour with sunflower seed flour.
- Add a pinch of espresso powder to enhance the chocolate flavor.
- Serve these cookies with pork rinds or cucumber slices for a complete keto-friendly snack.
