- 2 pounds flank steak, trimmed and flattened to 1/2 inch
- 1 cup cooked chestnuts, finely chopped
- 1/2 cup seasoned breadcrumbs
- 1/4 cup grated Parmigiano-Reggiano

- 2 cloves garlic, minced
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon extra virgin olive oil
- 1/2 cup rich beef stock
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Kitchen twine or toothpicks for securing
Instructions
- Preheat your oven to 375°F.
- In a large bowl, combine the chopped chestnuts, seasoned breadcrumbs, Parmigiano-Reggiano, parsley, minced garlic, sea salt, black pepper, thyme, and garlic powder. Stir until well blended.
- Lay the flattened flank steak on a clean surface and evenly distribute the chestnut mixture over it, leaving a 1-inch margin around the edges.
- Roll the steak tightly from one end to the other and secure it with kitchen twine or toothpicks every couple of inches.
- In a large oven-safe skillet, heat the olive oil over medium-high heat and sear the beef roll on all sides until golden-brown, about 3-4 minutes per side.
- Pour in the beef stock and soy sauce, allowing the mixture to come to a gentle simmer. Cover the skillet with a lid or aluminum foil.
- Place the skillet in the preheated oven and roast for 30-35 minutes, or until the internal temperature registers 145°F for medium-rare.
- Once cooked, remove the beef roll from the oven and let it rest for about 10 minutes before slicing. Serve warm and enjoy.
