  • 1 cup cooked chestnuts, finely chopped
  • 1/2 cup seasoned breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano
  • 1/4 cup fresh parsley, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup rich beef stock
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Kitchen twine or toothpicks for securing

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine the chopped chestnuts, seasoned breadcrumbs, Parmigiano-Reggiano, parsley, minced garlic, sea salt, black pepper, thyme, and garlic powder. Stir until well blended.
  3. Lay the flattened flank steak on a clean surface and evenly distribute the chestnut mixture over it, leaving a 1-inch margin around the edges.
  4. Roll the steak tightly from one end to the other and secure it with kitchen twine or toothpicks every couple of inches.
  5. In a large oven-safe skillet, heat the olive oil over medium-high heat and sear the beef roll on all sides until golden-brown, about 3-4 minutes per side.
  6. Pour in the beef stock and soy sauce, allowing the mixture to come to a gentle simmer. Cover the skillet with a lid or aluminum foil.
  7. Place the skillet in the preheated oven and roast for 30-35 minutes, or until the internal temperature registers 145°F for medium-rare.
  8. Once cooked, remove the beef roll from the oven and let it rest for about 10 minutes before slicing. Serve warm and enjoy.
