  • 1/4 cup chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/4 cup heavy cream (optional for sauce)
  • Fresh sage leaves for garnish

Instructions

  1. Preheat your oven to 375°F and prepare a baking dish by lining it with parchment paper or lightly greasing it.
  2. Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness of about 1/2 inch.
  3. In a bowl, mix together the chopped chestnuts, breadcrumbs, Parmesan cheese, minced sage, chicken broth, garlic powder, salt, and black pepper until well incorporated.
  4. Spread the chestnut mixture evenly across each chicken breast, leaving a small margin around the edges.
  5. Carefully roll each chicken breast from one end to the other, forming a tight cylinder, and secure the ends with toothpicks or kitchen twine.
  6. Heat olive oil and butter in a large oven-safe skillet over medium-high heat. Once shimmering, add the chicken roll-ups and sear for approximately 3-4 minutes on each side until golden-brown.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. Let the chicken rest on a cutting board for about 5 minutes. If making a sauce, pour the heavy cream into the skillet over medium heat, scraping up any flavorful bits, and let it simmer for 2-3 minutes.
  9. Slice the roll-ups into medallions, drizzle with the creamy sauce, and garnish with fresh sage leaves.
