- Place the pounded veal flank steak flat on a clean surface.
- Evenly distribute the chestnut mixture over the meat, leaving a 1-inch border around the edges.
- Carefully roll the veal from one end to the other, forming a tight log.
- Secure the roll with kitchen twine or toothpicks at intervals to keep it intact.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the veal roll and sear it on all sides until a golden-brown crust forms, approximately 3-4 minutes per side.
- Pour in the beef stock and white wine, allowing the mixture to come to a gentle simmer.
- Cover the skillet with a lid or aluminum foil, then transfer it to the oven.
- Bake for 25-30 minutes, or until the internal temperature of the veal reaches 145°F.
- Remove the skillet from the oven and let the veal roll rest for 10 minutes before slicing.
- Serve the slices drizzled with the flavorful pan juices.
