  • 1/4 cup extra-virgin olive oil
  • 1 cup rich beef stock
  • 1/2 cup dry white wine

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, mix together the chopped chestnuts, breadcrumbs, Parmigiano-Reggiano, parsley, thyme, rosemary, garlic, salt, and pepper until well blended.
  3. Place the pounded veal flank steak flat on a clean surface.
  4. Evenly distribute the chestnut mixture over the meat, leaving a 1-inch border around the edges.
  5. Carefully roll the veal from one end to the other, forming a tight log.
  6. Secure the roll with kitchen twine or toothpicks at intervals to keep it intact.
  7. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  8. Add the veal roll and sear it on all sides until a golden-brown crust forms, approximately 3-4 minutes per side.
  9. Pour in the beef stock and white wine, allowing the mixture to come to a gentle simmer.
  10. Cover the skillet with a lid or aluminum foil, then transfer it to the oven.
  11. Bake for 25-30 minutes, or until the internal temperature of the veal reaches 145°F.
  12. Remove the skillet from the oven and let the veal roll rest for 10 minutes before slicing.
  13. Serve the slices drizzled with the flavorful pan juices.
