- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup granulated erythritol or your preferred keto sweetener
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened shredded coconut
- 1/2 cup sugar-free dried cherries, chopped
- 1/4 cup sugar-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a mixing bowl, combine the almond flour, cocoa powder, erythritol, baking powder, and salt. Mix well.
- Add the melted butter, egg, and vanilla extract to the dry ingredients. Stir until fully combined and a dough forms.
- Press the dough evenly into the bottom of the prepared baking dish to create a crust.
- Sprinkle the shredded coconut, chopped dried cherries, and chocolate chips evenly over the crust.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set.
- Remove from the oven and let cool in the pan for at least 30 minutes before lifting out using the parchment paper. Cut into squares and serve.
Notes
- For added flavor, try using unsweetened almond or coconut milk as a drizzle on top before serving.
- You can substitute the dried cherries with sugar-free blueberries or raspberries for a different fruity twist.
- Serve with pork rinds or cucumber slices for a crunchy side option.
