- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup buttermilk
- ½ tsp baking soda
- ½ tsp salt
- 1 cup chopped fresh cherries (pitted)
- ¼ cup cherry jam or compote (swirled in)
- 1 cup heavy cream (cold)
- 2 tbsp powdered sugar
- 2 tbsp cherry syrup (from maraschino cherries or homemade)
- Optional: ½ tsp vanilla extract
- Fresh cherries or edible flowers for topping
Instructions
- Preheat your oven to 175°C (350°F). Grease and line an 8-inch round or square cake pan with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, alternating with buttermilk. Don’t overmix.
- Fold in the chopped cherries and gently swirl in the cherry jam for that “burst” effect.
- Pour the batter into the prepared pan. Bake for 35–40 minutes or until a toothpick inserted comes out clean. Let cool completely.
- In a chilled bowl, whip the heavy cream with powdered sugar and cherry syrup until soft peaks form. Add vanilla if using.
- Spread or pipe the whipped cherry clouds generously over the cooled cake. Garnish with fresh cherries or edible flowers if desired.
Notes
- You can make this in layers if you want a taller, dramatic effect.
- For a stronger cherry flavor, brush the cake with cherry liqueur (optional).
- Store leftovers in the fridge for up to 3 days.
