  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup chopped fresh cherries (pitted)
  • ¼ cup cherry jam or compote (swirled in)
  • 1 cup heavy cream (cold)
  • 2 tbsp powdered sugar
  • 2 tbsp cherry syrup (from maraschino cherries or homemade)
  • Optional: ½ tsp vanilla extract
  • Fresh cherries or edible flowers for topping

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and line an 8-inch round or square cake pan with parchment paper.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, alternating with buttermilk. Don’t overmix.
  4. Fold in the chopped cherries and gently swirl in the cherry jam for that “burst” effect.
  5. Pour the batter into the prepared pan. Bake for 35–40 minutes or until a toothpick inserted comes out clean. Let cool completely.
  6. In a chilled bowl, whip the heavy cream with powdered sugar and cherry syrup until soft peaks form. Add vanilla if using.
  7. Spread or pipe the whipped cherry clouds generously over the cooled cake. Garnish with fresh cherries or edible flowers if desired.
