Ingredients

  • 1/4 cup olive oil
  • 1/4 cup fresh cilantro, chopped

  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix together olive oil, cilantro, parsley, garlic, cumin, paprika, cayenne pepper, lemon juice, salt, and pepper to create the chermoula sauce.
  3. Coat the cleaned sardines with the chermoula sauce, ensuring they are well covered.
  4. Let the sardines marinate for at least 30 minutes.
  5. Place the sardines on the grill and cook for about 3-4 minutes on each side, or until they are cooked through and slightly charred.
  6. Serve hot with additional lemon wedges and enjoy!

Notes

  • For a spicier version, increase the amount of cayenne pepper.
  • These sardines can also be baked in the oven at 400°F for 15-20 minutes if grilling is not an option.
