- 1 pound fresh sardines, cleaned
- 1/4 cup olive oil
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix together olive oil, cilantro, parsley, garlic, cumin, paprika, cayenne pepper, lemon juice, salt, and pepper to create the chermoula sauce.
- Coat the cleaned sardines with the chermoula sauce, ensuring they are well covered.
- Let the sardines marinate for at least 30 minutes.
- Place the sardines on the grill and cook for about 3-4 minutes on each side, or until they are cooked through and slightly charred.
- Serve hot with additional lemon wedges and enjoy!
Notes
- For a spicier version, increase the amount of cayenne pepper.
- These sardines can also be baked in the oven at 400°F for 15-20 minutes if grilling is not an option.
