- 1 1/2 pounds red potatoes, cut into 1-inch chunks
- 12 oz smoked sausage or kielbasa, sliced
- 2 tablespoons olive oil
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 2 garlic cloves, minced
- Salt and pepper to taste
- Optional: sliced green onions or parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Toss the potatoes with olive oil, garlic, salt, and pepper. Spread them in an even layer on the baking sheet. Roast for 15 minutes.
- After 15 minutes, add the sliced sausage to the baking sheet with the potatoes. Roast for an additional 15-20 minutes, until the potatoes are crispy and the sausage is browned.
- Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese over the sausage and potatoes. Drizzle with ranch dressing.
- Return the baking sheet to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish with sliced green onions or parsley if desired. Serve hot.
Notes
- For a creamier sauce, add an extra 1/4 cup of ranch dressing.
- You can add more vegetables, such as broccoli or bell peppers, to the baking sheet when adding the sausage.
- If using a spicier sausage like chorizo, adjust the ranch and cheese to balance the flavors.
