For the Potatoes and Sausage:

  • 1 lb smoked sausage, sliced
  • 1 1/2 lbs red potatoes, diced
  • 1 packet (1 oz) ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  • Preheat oven to 400°F. Toss potatoes with oil, ranch seasoning, salt, and pepper. Roast for 25-30 minutes.
  • Brown the sliced sausage in a skillet.
  • Combine the potatoes, sausage, sour cream, milk, and 1 cup of cheddar cheese. Transfer to baking dish, top with remaining cheese, and bake for 10-15 minutes.
  • Garnish with parsley and serve warm.
