- 2 large zucchini, sliced into thin strips
- 1 cup shredded mozzarella cheese
- 4 ounces cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 3 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened cream cheese, shredded mozzarella, grated Parmesan, melted butter, minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Mix until well combined.
- Take a zucchini strip and place a spoonful of the cheese mixture at one end. Roll it up tightly and place it seam-side down on the prepared baking sheet. Repeat with the remaining zucchini strips and cheese mixture.
- Bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
Notes
- For added flavor, try using different cheeses such as cheddar or pepper jack.
- You can also substitute the zucchini with eggplant or bell peppers for a different twist.
- Serve with pork rinds or cucumber slices for a crunchy side option.
