Ingredients

  • 1/2 lb shrimp, peeled and deveined
  • 4 slices of bread (sourdough or French bread)
  • 1/4 cup softened butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • 1 cup mozzarella cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • Mix butter, garlic, parsley, garlic powder, salt, and pepper in a bowl. Set aside.
  • Sauté shrimp in olive oil until cooked through, about 2-3 minutes per side. Set aside.
  • Spread garlic butter on one side of each bread slice. Layer cheese and shrimp on the unbuttered side, close the sandwich, and butter the outside.
  • Grill sandwiches in a skillet for 3-4 minutes per side, until golden and crispy. Serve hot.

Notes

  • For an extra crispy finish, sprinkle Parmesan cheese on the buttered side of the bread before grilling.
