Ingredients
- Cooked shredded chicken: 2 cups
- Olive oil: 1 tbsp
- Onion, diced: 1 small
- Garlic, minced: 2 cloves
- Diced tomatoes with green chilies (drained): 1 (10 oz) can
- Taco seasoning (or homemade blend): 1 packet
- Chicken broth: ½ cup
- Flour or corn tortillas: 8–10
- Shredded Mexican blend cheese (or cheddar + mozzarella): 2 cups
- Red onion, diced (optional): ½ cup
- Fresh cilantro, chopped: ½ cup
- Sour cream, salsa, or guacamole: For serving
Instructions
- Heat olive oil in a skillet over medium heat. Add the diced onion and garlic, and sauté until soft and fragrant.
- Stir in the shredded chicken, diced tomatoes, taco seasoning, and chicken broth. Let the mixture simmer for 5–6 minutes, stirring occasionally, until it thickens slightly and the flavors meld together.
- Set your oven to 375°F (190°C) so it’s ready when the tacos are assembled.
- Lightly grease a 9×13-inch baking dish to keep the tacos from sticking.
- Spoon some of the chicken mixture into each tortilla, then sprinkle a bit of cheese inside before rolling them up. Place the rolled tacos seam-side down in the prepared baking dish.
- Sprinkle the remaining cheese evenly over the top of the tacos. If you’d like extra flavor and crunch, scatter diced red onion and chopped cilantro over the cheese.
- Place the dish in the oven and bake uncovered for 15–20 minutes, or until the cheese is melted, bubbly, and golden brown.
- Finish with a sprinkle of fresh cilantro and serve the cheesy baked tacos hot with sour cream, salsa, or guacamole on the side.
