- 2 cups cooked chicken, shredded
- 1 cup cooked bacon, crumbled
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup cooked quinoa or brown rice
- 1 cup frozen broccoli florets
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup green onions, sliced (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, crumbled bacon, ranch dressing, shredded cheddar cheese, cooked quinoa or brown rice, frozen broccoli, garlic powder, onion powder, black pepper, and salt. Mix well until all ingredients are evenly coated.
- Transfer the mixture into a greased 9×13-inch baking dish, spreading it out evenly.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions before serving.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the mixture before baking.
- Substitute the quinoa or brown rice with cauliflower rice for a lower-carb option.
