  • 1 cup heavy whipping cream

Instructions

  1. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.
  2. Divide the crumb mixture evenly among 6 small cups or ramekins, pressing it down firmly to form a crust layer at the bottom.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  4. Gradually add the powdered sugar and vanilla extract to the cream cheese, mixing until fully incorporated and smooth.
  5. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
  6. Spoon the cheesecake filling over the crust in each cup, smoothing the top with a spatula.
  7. Cover the cups with plastic wrap and refrigerate for at least 4 hours or until set.
  8. Before serving, top with fresh berries or your favorite fruit topping if desired.

Notes

  • For a lighter version, substitute half of the cream cheese with Greek yogurt.
  • You can also add a layer of chocolate ganache on top for a decadent twist.
