Description

A delicious and easy-to-make low-carb cheeseburger casserole that combines ground beef, cheese, and riced cauliflower for a satisfying meal.


Ingredients

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 1 cup chopped tomatoes (fresh or canned)
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup Greek yogurt
  • 4 large eggs
  • 1 cup riced cauliflower
  • 1/4 cup sliced green onions (for garnish)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large skillet over medium heat, brown the ground beef along with the chopped onion and minced garlic, stirring occasionally for about 5-7 minutes until the meat is fully cooked and the onion is soft. Drain any excess grease from the pan.
  3. Add the sea salt, black pepper, smoked paprika, and chopped tomatoes to the skillet, mixing well. Let it simmer for an additional 2-3 minutes until everything is heated through.
  4. In a mixing bowl, combine the beef mixture with riced cauliflower, Greek yogurt, and two-thirds of the grated cheddar cheese. Stir until all ingredients are well incorporated.
  5. In another bowl, beat the eggs until they are frothy, then pour them into the beef mixture, stirring to ensure everything is evenly coated.
  6. Pour the entire mixture into a greased 9×13-inch baking dish, spreading it out evenly. Top with the remaining cheddar cheese.
  7. Bake in the preheated oven for about 30-35 minutes, or until the casserole is firm and the cheese has melted and turned a lovely golden brown.
  8. Allow the dish to rest for 5-10 minutes before serving. Finish with a sprinkle of sliced green onions on top for a fresh touch.
