- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon smoked paprika
- 1 cup chopped tomatoes (fresh or canned)
- 1 cup grated sharp cheddar cheese
- 1/2 cup Greek yogurt
- 4 large eggs
- 1 cup riced cauliflower
- 1/4 cup sliced green onions (for garnish)
Instructions
- Preheat your oven to 350°F.
- In a large skillet over medium heat, brown the ground beef along with the chopped onion and minced garlic, stirring occasionally for about 5-7 minutes until the meat is fully cooked and the onion is soft. Drain any excess grease from the pan.
- Add the sea salt, black pepper, smoked paprika, and chopped tomatoes to the skillet, mixing well. Let it simmer for an additional 2-3 minutes until everything is heated through.
- In a mixing bowl, combine the beef mixture with riced cauliflower, Greek yogurt, and two-thirds of the grated cheddar cheese. Stir until all ingredients are well incorporated.
- In another bowl, beat the eggs until they are frothy, then pour them into the beef mixture, stirring to ensure everything is evenly coated.
- Pour the entire mixture into a greased 9×13-inch baking dish, spreading it out evenly. Top with the remaining cheddar cheese.
- Bake in the preheated oven for about 30-35 minutes, or until the casserole is firm and the cheese has melted and turned a lovely golden brown.
- Allow the dish to rest for 5-10 minutes before serving. Finish with a sprinkle of sliced green onions on top for a fresh touch.
