Description

Cheddar-Stuffed Meatballs are delicious cheesy beef bombs that are perfect for any occasion.


Ingredients

  • 1 pound ground beef
  • 1 cup panko breadcrumbs
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup finely chopped basil
  • 1/4 cup buttermilk
  • 1 large egg
  • 1 teaspoon garlic salt
  • 1 teaspoon onion flakes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 ounces aged cheddar cheese, diced
  • 1 cup tomato sauce
  • 1 tablespoon canola oil

Instructions

  1. Preheat your oven to 400°F.
  2. In a mixing bowl, combine the ground beef, panko breadcrumbs, Parmesan cheese, basil, buttermilk, egg, garlic salt, onion flakes, kosher salt, and black pepper. Stir gently until just blended.
  3. Scoop out approximately 2 tablespoons of the mixture and press it flat in your hand.
  4. Place a piece of aged cheddar in the center, then fold the meat around the cheese, shaping it into a ball.
  5. Repeat until all the meat mixture and cheese are used.
  6. In a large oven-safe skillet, heat the canola oil over medium heat.
  7. Add the meatballs and sear for about 5 minutes, turning to achieve an even golden brown.
  8. Pour the tomato sauce over the meatballs and transfer the skillet to the oven.
  9. Bake for 15-20 minutes, or until the meatballs are fully cooked and the cheese is bubbling.
  10. Allow the meatballs to rest for a few minutes before serving.

Notes

  • For an extra flavor boost, mix in 1/2 teaspoon of smoked paprika into the meat mixture.
  • Feel free to swap ground beef with ground lamb or pork for a unique twist while maintaining the cheesy center.
