Chebakia is a traditional Moroccan pastry, perfect for special occasions and known for its unique flavor and texture.
Ingredients

- 2 cups all-purpose flour
- 1 cup sesame seeds, toasted
- 1/2 cup unsalted butter, melted
- 1/4 cup orange blossom water
- 1/4 cup honey
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup water (as needed)
- Oil for frying
- Additional honey for drizzling
- Sesame seeds for garnish
Instructions
- In a large mixing bowl, combine the flour, toasted sesame seeds, ground cinnamon, ground ginger, salt, and baking powder. Mix well to combine all dry ingredients.
- In a separate bowl, mix the melted butter, orange blossom water, and honey until well combined.
- Gradually add the wet mixture to the dry ingredients, mixing with your hands or a wooden spoon. Add water as needed to form a soft, pliable dough.
- Knead the dough for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
- After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball into a thin rectangle, about 1/8 inch thick.
- Fold the rectangle in half lengthwise, then twist it into a spiral shape. Pinch the ends to secure the shape. Repeat with the remaining dough.
- Heat oil in a deep frying pan over medium heat. Fry the chebakia in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
- While still warm, drizzle the chebakia with additional honey and sprinkle with sesame seeds. Let cool slightly before serving.
Notes
- For a spicier flavor, add a pinch of nutmeg or allspice to the dough mixture.
- Substitute the orange blossom water with rose water for a different aromatic twist.
