Description

Delicious hand pies filled with charred scallions and feta cheese, perfect for a snack or appetizer.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup cold water
  • 1 cup scallions, chopped
  • 1 tablespoon olive oil
  • 1 cup feta cheese, crumbled
  • 1 teaspoon black pepper
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine the flour and salt. Add the chilled butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add the cold water, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. While the dough is chilling, heat the olive oil in a skillet over medium-high heat. Add the chopped scallions and cook until charred and softened, about 5 minutes. Remove from heat and let cool.
  3. Preheat your oven to 400°F.
  4. In a bowl, combine the charred scallions, feta cheese, and black pepper. Mix well.
  5. On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out circles using a 4-inch round cutter.
  6. Place a tablespoon of the scallion and feta mixture in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  7. Place the hand pies on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  8. Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the filling.
  • You can substitute the feta with goat cheese for a different flavor profile.
