Description
A rich and silky comfort soup made with roasted beef marrow bones, perfect for warming up on a chilly day.
Ingredients

- 2 large beef marrow bones (about 1 pound total)
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 celery stalk, diced
- 4 cups beef broth
- 1 cup heavy cream
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Preheat your oven to 450°F. Place the marrow bones on a baking sheet and roast for about 20-25 minutes, or until the marrow is browned and bubbly. Remove from the oven and let cool slightly. Scoop out the marrow and set aside, discarding the bones.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
- Pour in the beef broth and bring to a simmer. Add the roasted marrow and thyme. Let the mixture simmer for 15-20 minutes to allow the flavors to meld.
- Using an immersion blender, puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
- Stir in the heavy cream and season with salt and pepper to taste. Heat through for an additional 5 minutes, but do not let it boil.
- Serve hot, garnished with chopped fresh parsley.
Notes
- For a smoky flavor, add a teaspoon of smoked paprika during the sautéing step.
- For a lighter version, substitute half of the heavy cream with coconut milk.
