Charred Marrow Bisque: A Silky Comfort Soup Recipe

Description

A rich and silky comfort soup made with roasted beef marrow bones, perfect for warming up on a chilly day.


Ingredients

  • 2 large beef marrow bones (about 1 pound total)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 450°F. Place the marrow bones on a baking sheet and roast for about 20-25 minutes, or until the marrow is browned and bubbly. Remove from the oven and let cool slightly. Scoop out the marrow and set aside, discarding the bones.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
  3. Pour in the beef broth and bring to a simmer. Add the roasted marrow and thyme. Let the mixture simmer for 15-20 minutes to allow the flavors to meld.
  4. Using an immersion blender, puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
  5. Stir in the heavy cream and season with salt and pepper to taste. Heat through for an additional 5 minutes, but do not let it boil.
  6. Serve hot, garnished with chopped fresh parsley.

Notes

  • For a smoky flavor, add a teaspoon of smoked paprika during the sautéing step.
  • For a lighter version, substitute half of the heavy cream with coconut milk.
