A delicious and healthy recipe for charred lemon cauliflower steaks topped with pistachio dust.
Ingredients

- 1 large head of cauliflower
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 2 lemons (1 for juice, 1 for wedges)
- 1/2 cup shelled pistachios, finely chopped
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat your grill or grill pan over medium-high heat.
- Remove the leaves from the cauliflower and trim the stem, keeping the head intact. Slice the cauliflower into 1-inch thick steaks.
- In a small bowl, whisk together the olive oil, salt, black pepper, garlic powder, and smoked paprika. Brush both sides of the cauliflower steaks with the olive oil mixture.
- Place the cauliflower steaks on the grill and cook for about 5-7 minutes on each side, or until they are charred and tender. Squeeze the juice of one lemon over the steaks while they are grilling.
- While the cauliflower is grilling, prepare the pistachio dust by mixing the finely chopped pistachios with chopped parsley if using.
- Once the cauliflower steaks are done, remove them from the grill and let them rest for a minute. Serve warm, garnished with the pistachio dust and lemon wedges on the side.
Notes
- For a spicy kick, add a pinch of cayenne pepper to the olive oil mixture.
- Try substituting the pistachios with walnuts or almonds for a different flavor profile.
