A delightful recipe for Charred Broccoli & Hemp Seed Pesto Spaghetti that combines roasted broccoli with a creamy hemp seed pesto for a delicious meal.

- 8 ounces spaghetti
- 2 cups broccoli florets
- 3 tablespoons olive oil, divided
- 1/2 teaspoon salt, divided
- 1/4 teaspoon black pepper
- 1/2 cup hemp seeds
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the broccoli florets with 1 tablespoon of olive oil, 1/4 teaspoon of salt, and black pepper. Spread them on a baking sheet in a single layer.
- Roast the broccoli in the preheated oven for 15-20 minutes, or until charred and tender, stirring halfway through.
- While the broccoli is roasting, cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
- In a food processor, combine the roasted broccoli, hemp seeds, Parmesan cheese, garlic, lemon juice, remaining 2 tablespoons of olive oil, and the remaining 1/4 teaspoon of salt. Blend until smooth, adding reserved pasta water as needed to reach desired consistency.
- In a large bowl, combine the cooked spaghetti with the hemp seed pesto, tossing until evenly coated. If desired, add red pepper flakes for a bit of heat.
- Serve immediately, garnished with extra Parmesan cheese and a drizzle of olive oil if desired.
Notes
- For a vegan version, omit the Parmesan cheese or substitute with nutritional yeast.
- Add cherry tomatoes or spinach for extra color and nutrients; toss them in with the spaghetti before mixing in the pesto.
