Ingredients

  • 3 large eggs, separated
  • 1 cup granulated sugar, divided
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 1/4 cup champagne or sparkling wine
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for the filling)
  • Fresh berries (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
  2. In a large bowl, beat the egg yolks and 3/4 cup of granulated sugar together until thick and pale. Stir in the vanilla extract and champagne.
  3. In another bowl, sift together the flour and salt. Gradually fold the dry ingredients into the egg yolk mixture until just combined.
  4. In a separate bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the remaining 1/4 cup of granulated sugar and continue beating until stiff peaks form.
  5. Gently fold the egg whites into the batter in three additions, being careful not to deflate the mixture.
  6. Pour the batter into the prepared pan, spreading it evenly. Bake for 12-15 minutes or until the cake springs back when lightly touched.
  7. While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar.
  8. Once the cake is done, remove it from the oven and immediately invert it onto the prepared towel. Peel off the parchment paper and roll the cake up in the towel, starting from one short end. Let it cool completely in the towel.
  9. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  10. Once the cake is cool, carefully unroll it and spread the whipped cream evenly over the surface. Roll the cake back up without the towel.
  11. Place the cake seam-side down on a serving platter. Chill in the refrigerator for at least 1 hour before slicing.
  12. Garnish with fresh berries if desired before serving.

Notes

  • For a fruity twist, add a layer of fresh fruit or fruit preserves on top of the whipped cream before rolling.
  • Substitute the champagne with a flavored sparkling water for a non-alcoholic version.
