A delightful dessert combining the rich flavors of chai milk crème caramel with sweet tea-poached plums.

- 2 cups whole milk
- 1 cup heavy cream
- 1 cup granulated sugar, divided
- 4 large eggs
- 2 large egg yolks
- 2 teaspoons vanilla extract
- 2 teaspoons ground chai spice mix (or 1 chai tea bag steeped in milk)
- 1/4 teaspoon salt
- 4 ripe plums, pitted and sliced
- 2 cups water
- 2 tablespoons sugar
- 1 chai tea bag
Instructions
- Preheat your oven to 325°F.
- In a saucepan over medium heat, combine the whole milk, heavy cream, and 1/2 cup of sugar. Stir until the sugar dissolves and the mixture is warm but not boiling.
- If using a chai tea bag, steep it in the warm milk mixture for about 5 minutes, then remove. If using ground chai spice, whisk it in now.
- In a large bowl, whisk together the eggs, egg yolks, remaining 1/2 cup sugar, vanilla extract, and salt until well combined.
- Gradually pour the warm milk mixture into the egg mixture, whisking constantly to prevent curdling.
- Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps.
- To prepare the caramel, place 1/2 cup of sugar in a medium saucepan over medium heat. Cook, without stirring, until the sugar melts and turns a golden amber color.
- Quickly pour the caramel into the bottom of individual ramekins or a single baking dish, tilting to coat the bottom evenly.
- Pour the crème caramel mixture over the caramel in the ramekins or dish.
- Place the ramekins in a larger baking pan and fill the pan with hot water until it reaches halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the crème caramel is set but still slightly jiggly in the center.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
- For the tea-poached plums, combine the water, sugar, and chai tea bag in a saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes.
- Add the sliced plums and simmer for an additional 5-7 minutes until tender. Remove from heat and let cool in the syrup.
- To serve, run a knife around the edge of each ramekin and invert onto a plate. Top with tea-poached plums and a drizzle of the syrup.
Notes
- For a spicier flavor, add a pinch of ground ginger or cardamom to the milk mixture.
- Try substituting the plums with other seasonal fruits like peaches or pears for a different twist.
