- Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Grease and line a 9×13-inch pan.
- Whisk together dry ingredients.
- Mix wet ingredients and combine with dry ingredients. Fold in grated carrots.
- Bake for 30-35 minutes, then cool completely.
- Prepare cream cheese frosting and spread on cooled cake.
- Slice and serve.
