  • Cream Cheese Frosting:
    • 8 oz cream cheese, softened
    • 1/2 cup butter, softened
    • 4 cups powdered sugar
    • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F. Grease and line a 9×13-inch pan.
  • Whisk together dry ingredients.
  • Mix wet ingredients and combine with dry ingredients. Fold in grated carrots.
  • Bake for 30-35 minutes, then cool completely.
  • Prepare cream cheese frosting and spread on cooled cake.
  • Slice and serve.
