A flavorful and healthy wrap made with fresh vegetables and a creamy tahini dressing.
Ingredients

- 2 large whole wheat tortillas
- 1 cup grated carrots
- 1/2 cup cucumber, thinly sliced
- 1/4 cup red bell pepper, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup tahini
- 2 tablespoons fresh ginger, grated
- 2 tablespoons lemon juice
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together tahini, grated ginger, lemon juice, honey (or maple syrup), salt, and pepper until smooth. If the mixture is too thick, add a little water to reach your desired consistency.
- Lay the whole wheat tortillas flat on a clean surface. Spread a generous layer of the tahini mixture over each tortilla, leaving about an inch around the edges.
- Evenly distribute the grated carrots, cucumber slices, red bell pepper, and chopped cilantro on top of the tahini spread.
- Starting from one end, carefully roll the tortilla tightly to enclose the filling. Slice each wrap in half diagonally.
- Serve immediately or wrap in parchment paper for a portable meal. If preparing in advance, store in the refrigerator for up to 2 days.

- Add sliced avocado or cooked chicken for extra creaminess and protein.
- Substitute the tahini with hummus or yogurt for a different flavor profile.
