Ingredients

  • 2 large whole wheat tortillas
  • 1 cup grated carrots
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup tahini
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons lemon juice
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together tahini, grated ginger, lemon juice, honey (or maple syrup), salt, and pepper until smooth. If the mixture is too thick, add a little water to reach your desired consistency.
  2. Lay the whole wheat tortillas flat on a clean surface. Spread a generous layer of the tahini mixture over each tortilla, leaving about an inch around the edges.
  3. Evenly distribute the grated carrots, cucumber slices, red bell pepper, and chopped cilantro on top of the tahini spread.
  4. Starting from one end, carefully roll the tortilla tightly to enclose the filling. Slice each wrap in half diagonally.
  5. Serve immediately or wrap in parchment paper for a portable meal. If preparing in advance, store in the refrigerator for up to 2 days.
