- 2 tablespoons unsalted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound bacon, chopped
- 1 pound ground beef
- 1 pound chicken thighs, diced
- 4 cups beef broth
- 1 cup heavy cream
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 green onions, sliced (for garnish)
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped bacon to the pot and cook until crispy, about 7-10 minutes. Remove excess grease if desired, leaving about 1 tablespoon in the pot.
- Stir in the ground beef and diced chicken thighs. Cook until the meat is browned and cooked through, about 8-10 minutes.
- Pour in the beef broth and bring the mixture to a simmer. Add the heavy cream, smoked paprika, dried thyme, salt, and pepper. Stir well to combine.
- Reduce the heat to low and let the chowder simmer for 15-20 minutes, allowing the flavors to meld together.
- Just before serving, stir in the shredded cheddar cheese until melted and creamy.
- Serve hot, garnished with sliced green onions.
Notes
- For a spicier kick, add a pinch of cayenne pepper or diced jalapeños while cooking the meat.
- To make it more filling, serve the chowder over a bed of sautéed spinach or alongside a side salad.
