- 1 pre-made pie crust (or homemade)
- 2 tablespoons extra virgin olive oil
- 2 large onions, sliced thinly
- 1 teaspoon brown sugar
- 1/2 teaspoon sea salt
- 4 large eggs
- 1 cup full-fat cream
- 1 cup fresh spinach, roughly chopped
- 1 cup crumbled feta cheese
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup grated mozzarella cheese (optional)
Instructions
- Preheat your oven to 375°F.
- If using a store-bought crust, lay it into a 9-inch tart pan and poke holes in the base with a fork. Bake the crust for about 10 minutes, then let it cool.
- In a skillet, warm the olive oil over medium heat. Add the sliced onions, brown sugar, and sea salt. Sauté the onions for 20-25 minutes until caramelized.
- Remove the skillet from heat and allow the onions to cool slightly.
- In a large bowl, whisk together the eggs and cream until smooth. Add black pepper and nutmeg, mixing well.
- Fold in the chopped spinach and crumbled feta cheese.
- Once the onions have cooled, gently incorporate them into the egg mixture.
- Transfer the filling into the cooled pie crust. If desired, sprinkle grated mozzarella on top.
- Bake in the oven for 30-35 minutes, or until the tart is firm and golden on top.
- Let the tart rest for about 10 minutes before slicing. Serve warm or at room temperature.
