Ingredients

  • 1 pre-made pie crust (or homemade)
  • 2 tablespoons extra virgin olive oil
  • 2 large onions, sliced thinly
  • 1 teaspoon brown sugar
  • 1/2 teaspoon sea salt
  • 4 large eggs
  • 1 cup full-fat cream
  • 1 cup fresh spinach, roughly chopped
  • 1 cup crumbled feta cheese
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup grated mozzarella cheese (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. If using a store-bought crust, lay it into a 9-inch tart pan and poke holes in the base with a fork. Bake the crust for about 10 minutes, then let it cool.
  3. In a skillet, warm the olive oil over medium heat. Add the sliced onions, brown sugar, and sea salt. Sauté the onions for 20-25 minutes until caramelized.
  4. Remove the skillet from heat and allow the onions to cool slightly.
  5. In a large bowl, whisk together the eggs and cream until smooth. Add black pepper and nutmeg, mixing well.
  6. Fold in the chopped spinach and crumbled feta cheese.
  7. Once the onions have cooled, gently incorporate them into the egg mixture.
  8. Transfer the filling into the cooled pie crust. If desired, sprinkle grated mozzarella on top.
  9. Bake in the oven for 30-35 minutes, or until the tart is firm and golden on top.
  10. Let the tart rest for about 10 minutes before slicing. Serve warm or at room temperature.
