  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat the oven to 325°F and grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined and press into the bottom of the springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until well blended.
  4. Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  5. Stir in the sour cream until smooth.
  6. In a separate bowl, toss the diced apples with cinnamon and nutmeg, then gently fold into the cream cheese batter.
  7. Pour the cheesecake batter over the crust in the springform pan.
  8. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  9. Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour.
  10. Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  11. Before serving, drizzle caramel sauce over the top, slice, and serve chilled.
