- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 cup caramel sauce (store-bought or homemade)
Instructions
- Preheat the oven to 325°F and grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined and press into the bottom of the springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until well blended.
- Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
- Stir in the sour cream until smooth.
- In a separate bowl, toss the diced apples with cinnamon and nutmeg, then gently fold into the cream cheese batter.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, drizzle caramel sauce over the top, slice, and serve chilled.
