- 2 large lemons
- 1 cup granulated sugar
- 1 cup water
- 1/2 cup granulated sugar (for coating)
Instructions
- Thoroughly rinse the lemons under cool water to eliminate any surface residues.
- Carefully slice the lemons into thin strips, minimizing the amount of white pith included, aiming for approximately 1 cup of lemon peel strips.
- In a medium saucepan, mix the lemon strips with 1 cup of water and 1 cup of sugar. Heat over medium flame, stirring continuously until the sugar dissolves.
- Once boiling, lower the heat and allow the mixture to gently simmer for around 30 minutes, or until the lemon peels turn soft and translucent.
- After simmering, take the saucepan off the heat and let the peels soak in the syrup for about 15 minutes.
- Using a slotted spoon, transfer the lemon peels to a wire rack placed over a baking sheet to drain and cool.
- Once cooled, roll the peels in the remaining 1/2 cup of granulated sugar until thoroughly coated.
- Return the sugared peels to the wire rack and let them dry for a minimum of 2 hours before storing in an airtight container.
Notes
- For an extra burst of flavor, consider adding a pinch of salt to the syrup during the simmering process.
- For a decadent twist, dip the candied lemon peels in melted dark chocolate.
- If you prefer a less sugary treat, cut back on the sugar used for the coating.
