Description

A fresh and vibrant salad inspired by the classic California roll, featuring fresh vegetables and a delicious dressing.


Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 1 carrot, julienned
  • 1/2 cup imitation crab meat, shredded
  • 2 tablespoons sesame seeds
  • 2 green onions, chopped
  • Soy sauce, for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool.
  4. In a large bowl, combine the cooled rice, cucumber, avocado, carrot, imitation crab meat, sesame seeds, and green onions.
  5. Toss gently to combine all ingredients.
  6. Serve the salad with soy sauce on the side.

Notes

  • For a gluten-free option, use tamari instead of soy sauce.
  • Feel free to add other ingredients like radish or seaweed for extra flavor.
