Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 cucumber, julienned
- 1 avocado, sliced
- 1 carrot, julienned
- 1/2 cup imitation crab meat, shredded
- 2 tablespoons sesame seeds
- 2 green onions, chopped
- Soy sauce, for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice and let it cool.
- In a large bowl, combine the cooled rice, cucumber, avocado, carrot, imitation crab meat, sesame seeds, and green onions.
- Toss gently to combine all ingredients.
- Serve the salad with soy sauce on the side.
Notes
- For a gluten-free option, use tamari instead of soy sauce.
- Feel free to add other ingredients like radish or seaweed for extra flavor.
