Cajun chicken lasagna is a bold, spicy twist on classic lasagna, featuring Cajun-seasoned chicken, creamy cheese, and rich sauce layered between tender lasagna noodles.

- 2–3 boneless, skinless chicken breasts or thighs
- 2 tbsp Cajun seasoning (divided)
- 1 tbsp olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 garlic cloves, minced
- 1 1/2 cups tomato sauce
- 1 cup heavy cream or half-and-half
- 9–12 lasagna noodles, cooked
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/4 cup grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
Instructions
- Season chicken with 2 tbsp Cajun seasoning and cook in olive oil until done. Shred or dice chicken.
- Sauté onion, bell pepper, and garlic. Add tomato sauce and cream, simmer until thickened.
- Mix ricotta, mozzarella, Parmesan, egg, and 1 tsp Cajun seasoning.
- Layer lasagna: sauce, noodles, ricotta mixture, chicken, and repeat. Top with remaining cheese.
- Bake at 375°F for 25 minutes, uncover, and bake 10-15 minutes until golden
Notes
- Adjust the spice level by adding more or less Cajun seasoning.
- Let the lasagna rest for 10 minutes before slicing to ensure clean cuts.
