- 1 pound beef liver, sliced thin
- 1/4 cup olive oil
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 4 pita breads or baguette rolls
- Sliced tomatoes and pickles for serving
Instructions
- Rinse the beef liver under cold water and pat dry with paper towels. Cut into thin slices if not already done.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they are soft and translucent, about 5-7 minutes.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Increase the heat to medium-high and add the liver slices to the skillet. Season with cumin, coriander, paprika, salt, and pepper. Cook for about 3-4 minutes on each side until the liver is browned and cooked through.
- Remove the skillet from heat and stir in the chopped parsley.
- Slice the pita breads or baguette rolls in half and fill each with the liver mixture. Top with sliced tomatoes and pickles as desired.
- Serve warm and enjoy!

- For a spicier kick, add a pinch of cayenne pepper or serve with hot sauce.
