- 1 pound cod fillets, skinless
- 1 cup unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon fresh lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Season the cod fillets with salt and pepper on both sides. Once the oil is hot, add the cod fillets and sear for about 2-3 minutes on each side until they are golden brown. Remove the fillets from the skillet and set aside.
- In the same skillet, reduce the heat to low and add the butter. Allow it to melt slowly, stirring occasionally.
- Once the butter is melted, add the minced garlic and lemon juice. Stir to combine.
- Return the cod fillets to the skillet, spooning the butter over them. Cook gently for about 5-7 minutes, or until the cod is opaque and flakes easily with a fork.
- For crispy edges, increase the heat to medium-high for the last minute of cooking, allowing the butter to bubble and crisp the edges of the fillets.
- Remove from heat and garnish with chopped parsley before serving.
