- 2 ripe avocados
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup buffalo sauce
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine the chickpeas, buffalo sauce, olive oil, garlic powder, onion powder, salt, and pepper.
- Spread the chickpea mixture on a baking sheet and roast for 20 minutes.
- While the chickpeas are roasting, cut the avocados in half and remove the pit.
- Once the chickpeas are done, remove them from the oven and let them cool slightly.
- Scoop the roasted chickpeas into the avocado halves.
- Garnish with fresh cilantro if desired and serve immediately.
