Ingredients

  • 1/2 cup buffalo sauce
  • 4 slices of bread
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons butter

Instructions

  1. Preheat your grill or skillet over medium heat.
  2. In a bowl, toss the cauliflower florets with buffalo sauce until well coated.
  3. Place the coated cauliflower on the grill and cook for about 10 minutes, turning occasionally, until tender.
  4. Assemble the sandwiches by placing cheese and grilled buffalo cauliflower between two slices of bread.
  5. Spread butter on the outside of the sandwiches.
  6. Grill the sandwiches for 3-4 minutes on each side, or until golden brown and the cheese is melted.
