Delicious Buffalo Cauliflower Bites that are keto-friendly and served with a sugar-free blue cheese dip.

- 1 medium head of cauliflower, cut into bite-sized florets
- 1/2 cup almond flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup hot sauce (such as Frank’s RedHot)
- 2 tablespoons unsalted butter, melted
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup crumbled blue cheese
- 1 teaspoon lemon juice
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Add the cauliflower florets to the bowl and toss until they are evenly coated with the almond flour mixture.
- Spread the coated cauliflower on the prepared baking sheet in a single layer and bake for 20-25 minutes, or until golden and crispy.
- While the cauliflower is baking, mix the hot sauce and melted butter in a small bowl.
- Once the cauliflower is done, remove it from the oven and toss it in the hot sauce mixture until well coated.
- Return the coated cauliflower to the baking sheet and bake for an additional 10 minutes to set the sauce.
- For the blue cheese dip, whisk together sour cream, mayonnaise, crumbled blue cheese, lemon juice, black pepper, and garlic powder in a bowl until smooth.
- Serve the buffalo cauliflower bites hot with the blue cheese dip on the side.
Notes
- For extra crunch, try air frying the cauliflower bites at 400°F for about 15 minutes, shaking halfway through.
- Substitute the blue cheese with ranch dressing for a different flavor profile, or use a dairy-free alternative to make it vegan-friendly.
