  • 1/2 cup almond flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled blue cheese
  • 1 teaspoon lemon juice
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Add the cauliflower florets to the bowl and toss until they are evenly coated with the almond flour mixture.
  4. Spread the coated cauliflower on the prepared baking sheet in a single layer and bake for 20-25 minutes, or until golden and crispy.
  5. While the cauliflower is baking, mix the hot sauce and melted butter in a small bowl.
  6. Once the cauliflower is done, remove it from the oven and toss it in the hot sauce mixture until well coated.
  7. Return the coated cauliflower to the baking sheet and bake for an additional 10 minutes to set the sauce.
  8. For the blue cheese dip, whisk together sour cream, mayonnaise, crumbled blue cheese, lemon juice, black pepper, and garlic powder in a bowl until smooth.
  9. Serve the buffalo cauliflower bites hot with the blue cheese dip on the side.
