A delicious and healthy recipe for Buff Birthday Cake Protein Bars that are perfect for a treat.
Ingredients

- 1 ½ cups rolled oats
- 1 cup vanilla protein powder
- ½ cup almond flour
- ½ cup almond butter
- ¼ cup honey or maple syrup
- ¼ cup unsweetened applesauce
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- ½ cup sprinkles (plus extra for topping)
- ¼ cup mini chocolate chips (optional)
Instructions
- In a large mixing bowl, combine the rolled oats, vanilla protein powder, almond flour, and salt. Mix well to ensure even distribution of the dry ingredients.
- In a separate bowl, mix together the almond butter, honey (or maple syrup), applesauce, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir until fully combined. If desired, fold in the sprinkles and mini chocolate chips.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal. Press the mixture evenly into the bottom of the dish. Use a spatula or your hands to pack it down firmly.
- Sprinkle additional sprinkles on top and press them lightly into the mixture.
- Refrigerate the bars for at least 1 hour to set. Once firm, lift the bars out of the dish using the parchment paper and cut into squares or rectangles.
- Store the bars in an airtight container in the refrigerator for up to a week or freeze for longer storage.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter and use sunflower seed flour instead of almond flour.
- Add a scoop of your favorite flavored protein powder for a different taste, such as chocolate or cookies and cream.
