- 2 pounds Brussels sprouts, trimmed and halved
- 3 tablespoons olive oil
- 1 teaspoon salt

- 1 cup heavy cream
- 1 cup shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon nutmeg
- 1/2 cup breadcrumbs
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 400°F.
- In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until well coated.
- Spread the Brussels sprouts evenly on a baking sheet and roast for 20-25 minutes, or until they are tender and slightly caramelized.
- While the Brussels sprouts are roasting, in a medium saucepan over medium heat, combine the heavy cream, Gruyère cheese, Parmesan cheese, garlic powder, and nutmeg. Stir until the cheeses are melted and the mixture is smooth.
- Once the Brussels sprouts are done roasting, transfer them to a greased 9×13-inch baking dish.
- Pour the cheese sauce over the Brussels sprouts, ensuring they are evenly covered.
- In a small bowl, mix the breadcrumbs with the melted butter until well combined.
- Sprinkle the breadcrumb mixture evenly over the top of the cheese-covered Brussels sprouts.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
- Let the gratin cool for 5-10 minutes before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the cheese sauce.
- You can substitute the Gruyère cheese with cheddar or mozzarella for a different flavor profile.
