  • 1/4 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup heavy cream
  • 4 ripe peaches, sliced
  • 2 tablespoons brown sugar (for peaches)
  • Whipped cream (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together flour, brown sugar, baking powder, and salt.
  3. Add the cold butter and mix until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until just combined.
  5. Turn the dough onto a floured surface and knead gently.
  6. Roll out to about 1-inch thickness and cut into rounds.
  7. Place the rounds on a baking sheet and bake for 15-20 minutes until golden brown.
  8. While the shortcakes are baking, combine sliced peaches with brown sugar and let sit for 10 minutes.
  9. Once the shortcakes are done, let them cool slightly, then split them in half.
  10. Layer the peaches and whipped cream between the shortcake halves and serve.

Notes

  • For extra flavor, add a pinch of cinnamon to the peach mixture.
  • Shortcakes can be made ahead of time and stored in an airtight container.
