- 2 cups cauliflower florets, finely chopped
- 2 large carrots, shredded
- 1/2 small red onion, thinly sliced
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Finely chop the broccoli and cauliflower florets, and shred the carrots. Place in a large mixing bowl with the sliced red onion.
- Whisk together mayonnaise, Greek yogurt, apple cider vinegar, honey, and Dijon mustard. Season with salt and pepper.
- Pour the dressing over the vegetables and toss until evenly coated.
- Chill for at least 30 minutes before serving.
