Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 large egg
  • 3/4 cup water
  • 1/4 cup olive oil
  • 1 cup cooked and shredded chicken
  • 1/2 cup cooked spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Oil for frying

Instructions

  1. In a large bowl, mix the flour and salt. Make a well in the center and add the egg, water, and olive oil. Stir until a smooth dough forms.
  2. Knead the dough for about 5 minutes until elastic. Cover with a damp cloth and let it rest for 30 minutes.
  3. After resting, divide the dough into 8 equal pieces. Roll each piece into a thin circle, about 8 inches in diameter.
  4. In a separate bowl, combine the chicken, spinach, feta cheese, paprika, black pepper, and cayenne pepper. Mix well.
  5. Heat oil in a large skillet over medium heat. Place one dough circle in the skillet, and cook for about 1 minute until lightly golden.
  6. Flip the dough circle and add about 1/4 cup of the filling on one half of the circle. Fold the other half over to create a pocket.
  7. Cook for another 2-3 minutes until golden brown and crispy. Remove from the skillet and drain on paper towels.
  8. Repeat with remaining dough and filling.
  9. Serve warm with a side of yogurt or a fresh salad.

  • For a vegetarian option, substitute the chicken with cooked lentils or mushrooms.
