- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 large egg
- 3/4 cup water
- 1/4 cup olive oil
- 1 cup cooked and shredded chicken
- 1/2 cup cooked spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- Oil for frying
Instructions
- In a large bowl, mix the flour and salt. Make a well in the center and add the egg, water, and olive oil. Stir until a smooth dough forms.
- Knead the dough for about 5 minutes until elastic. Cover with a damp cloth and let it rest for 30 minutes.
- After resting, divide the dough into 8 equal pieces. Roll each piece into a thin circle, about 8 inches in diameter.
- In a separate bowl, combine the chicken, spinach, feta cheese, paprika, black pepper, and cayenne pepper. Mix well.
- Heat oil in a large skillet over medium heat. Place one dough circle in the skillet, and cook for about 1 minute until lightly golden.
- Flip the dough circle and add about 1/4 cup of the filling on one half of the circle. Fold the other half over to create a pocket.
- Cook for another 2-3 minutes until golden brown and crispy. Remove from the skillet and drain on paper towels.
- Repeat with remaining dough and filling.
- Serve warm with a side of yogurt or a fresh salad.
Notes
- For a vegetarian option, substitute the chicken with cooked lentils or mushrooms.
- Add herbs like parsley or dill to the filling for extra flavor.
